Today got off to a slow start. After working out at boot camp yesterday, I'm super sore in my shoulders. Not fun. Took some ibuprofen and Tylenol so hopefully that helps.
I got my new Betty Goes Vegan cookbook in the mail 2 days ago and I'm really excited to get cooking some great tasting meals. Unfortunately I'm broke this week. So I decided I would make a simple meal for lunch with ingredients I have.
A few weeks ago on Diners, Drive-Ins and Dives, Guy was with a chef (don't remember where) who made a really great baked sweet potato with a whole bunch of fixins piled on top. I thought it would be yummy veganized. So for lunch today I baked 4 sweet potatoes by just sticking them with a fork and baking them at 400 degrees for 45 minutes. I heated up some vegetarian chili, cheddar teese, and chipotle vegan sausage to put on top with some Sour Supreme. Sounds good huh?
My family are a bunch of meat eaters. I'm trying to get them to eat healthier. I figure you gotta start somewhere and the less animal products, the better.
I fixed it all up and before I was done, they went to a party being thrown a few doors up where they're serving hot dogs and hamburgers. Nice!
So.....I will eat alone.
